I completely forgot about the lemons that came in a care package my aunt sent from Vegas last Monday. Lemons are the best and I would normally not forget to use them. But this time I did, probably because the yummy French chiffon cake (mamon) and mango bars from Filipino bakeshop chain Red Ribbon, which came in the same package, grabbed my full attention. I didn't even know that Red Ribbon currently has 30 locations across the US as there is none anywhere near here.
As for the lemons they were on the verge of shriveling when I glimpsed them again last night. It would be a shame to waste them, as my aunt picked them herself from her backyard, a thoughtful - if last minute - filler for the box she was to send me. So I'm now looking at recipes for lemon meringue pie, which my daughter loves but which we've never made at home, hoping I'd get in the mood to bake and use these lemons.
But but...I feel rather...daunted. Maybe I'll feel more up to baking when I'm done cleaning out the storeroom, a task started just an hour ago but which is already threatening to drive me mad before this day is done. If you have easy recipes you care to share, I'd be very grateful.

Didn't know that Red Ribbon had 30 branches there either. Cool! As for the lemons, how wonderful it must be to have them growing in one's backyard!
